Prawns/ Chicken Thai curry
200 ml coconut milk
1 bowl prawns (cleaned)/ boneless chicken cubes
Half bowl mix veggies like broccoli/ red or yellow bell pepper/ zucchini
2 tablespoon thai curry paste green/ red ( i use readymade)
Sauté 2 tablespoon thai curry paste in little oil. Once masala it fried enough put all veggies n prawns/ chicken and sauté it for some more time till masala gets coated neatly. Add coconut milk and stir well. Boil for 10 min till all veggies n prawns/ chicken gets cooked. Add salt to taste.
Serve with hot rice ( Jasmine rice takes the dish to next level).
One can add few fresh thai spices in the oil as per their wish. My fav is lemongrass,galangal and thai basil.
